Zucchini Bread

3 eggs
2 cups sugar
1 cup vegetable oil
3 tsp. vanilla
3 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2-3 tsp. cinnamon
2 cups shredded zucchini

Beat eggs, sugar, oil and vanilla. Sift in dry ingredients and mix well. Stir in zucchini. Spoon into either 2 large or 4 small greased loaf pans.

Bake at 325 degrees for 50-60 minutes or until a toothpick inserted in the center comes out clean.

Just discovered this Les! I've been looking for a zucchini bread recipe so next time I head to the market I'll pick up some zucchini and give this a whirl. Yum!!
