Mediterranean White Bean Soup
3 links Sweet Italian Sausage (casings removed)
1/8 cup olive oil
1/2 medium-size onion, chopped
3 cups fresh tomatoes, chopped
8 oz. fresh mushrooms, diced
1 cup small bow-tie whole grain pasta (uncooked)
1/4 cup fresh parsley, chopped
1 can Great Northern beans
1/2 tsp. salt
1/4 tsp. black pepper
3 cups water
pinch cayenne pepper
Remove sausage from casing and brown meat in a medium-size dutch oven, breaking up into bite-size pieces. Drain sausage on paper towels and set aside.
Heat olive oil in dutch oven and sauté onions and tomatoes over medium-high heat for 5-7 minutes. Add remaining ingredients (including cooked sausage), reduce heat to medium-low, cover, and simmer for 20-40 minutes.
Serve with fresh grated parmesan cheese.

Andi - As with most soups, you can pretty much add anything else you like (carrots, celery, peppers, etc.). Definitely the time of year for soups. I plan to try more out later this month. What I really need to do is try some in the crockpot.
Oh I love all the new soup recipes popping up in the blogosphere. This looks so good... pefect for this nasty weather we are having.
I thought about you last week with the shootings. I hope your family and friends were saved from physical harm. I'm sure emotionally, the city is still shaken!

YUM! I saw a white bean, sage, pasta dish in one of my cookbooks which tempted me last week. Yours is a must for Christmas break!
Bellezza - If I had all the ingredients for this, I'd make it for dinner tonight. It's perfect for a cold (currently 18 degrees) and snowy (just shoveled half a foot off the sidewalks, driveway, and deck!) Saturday.
