Strawberry Cobbler



1/4 cup butter or margarine, softened
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
1 and 1/4 cups all-purpose flour
1 and 1/4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
3 cups fresh strawberries, cut in half lengthwise
1/4 cup all-purpose flour
1/4 cup brown sugar
1/4 cup butter or margarine, chilled

Beat 1/4 cup softened butter at medium speed with an electric mixer.
Gradually add 3/4 cup sugar, beating well.
Add egg and vanilla extract, mixing well.

Combine 1 and 1/4 cups flour, baking powder, and salt in a separate bowl.

Add to butter mixture alternating with milk, beginning and ending with flour mixture.
Spoon half of the batter into a greased 8" square baking dish.
Arrange strawberries on top, cut side down.
Cover with remaining batter.


Combine 1/4 cup flour and 1/4 cup brown sugar.
Cut in 1/4 cup chilled butter with a pastry blender until crumbly.
Sprinkle over strawberries & batter.

Bake at 350 degrees for 1 hour or until a wooden toothpick inserted in center comes out clean.

Serve warm with ice cream or sweetened whipped cream.

Yield: 8 servings (Yah, right. 6 is more realistic!)

Note: I used a round deep-dish ceramic pie plate instead of the 8" square pan. I also put a cookie sheet on the oven rack below the dish to catch the juices. This is so easy and SO good! I'm going to try it a couple more times with blueberries and peaches. Mmmmmm.

  1. This so reminds me of a traditional family recipe which my grandmother, mother and I make all the time. You can put ANY fruit on the top, and cover it with a struesel. The tradition fruit is plum, my son's favorite, but we have had it with peaches, strawberries, pears (and ginger). I'd be glad to email the recipe, if you so choose, but yours could practically be a double.

  2. Bellezza - I'd love to see your family recipe! By the way, I made this again a few days ago, but this time I used blueberries AND strawberries. I have some peaches ripening on the counter and hope to make a peach cobbler this weekend. After that, I'll have to head to the mall to buy new pants for me and Rod! ;)

  3. Okay, my friend, here goes:

    1 C. flour
    3 Tbl. sugar
    1 and 1/2 tsp. baking powder
    pinch salt
    1/2 stick butter
    1 egg
    1/2 C. milk

    Mix the dry ingredients together. Cut in the butter. Add the egg and milk, stirring until it's all blended.

    "Pour" (it's rather thick) into an 8x8 buttered pan. Top with fruit of your choice. Then drizzle on this struesel:

    1/2 C. flour
    1/2 C. sugar
    1/2 stick butter

    Bake at 400 for 35 minutes.

    It's so wonderful, and as you can see very similar to yours. Really, I haven't tasted a fruit on top that I haven't liked. But, you must try it with the deep purple plums, cut into about six slices each. I use about four plums, the big ones.

  7. Bellezza - I made the peach cobbler with your topping and it was great. Now to try the complete recipe. I'll keep ya posted on how it turns out.

    Framed - Ooh, I'll bet boysenberry cobbler is very good! Hope you can find some somewhere. I wonder if they're available in the frozen fruit section. Might be worth a try if you can't find them fresh.

    Thanks :). I can't recall how I ran into your blog, but once I found it and read a couple entries I was hooked, we have very similar tastes it seems.

    I tried this recipe this weekend with strawberries only, and it turned out just as good as it looks in your picture! In my next blog post, I plan to summarize my notes to your recipe and linking to your blog/recipe, if that's ok with you.

    Next time I will definitely try the raspberry/strawberry combo (I wanted to see how it turned out with just strawberries first). Thanks so much for this great recipe!

  15. Anonymous - I wish I could help. Maybe my berries were extra ripe? I wouldn't really say the entire recipe is juicy, though. It's definitely a cake and berry dessert. Mine just happened to ooze a bit out of the dish. Maybe my dish isn't as deep as the one you used?

    Hi, Wonderful recipe. We shared this with a friend whose parents are Russian and he said cobbler with a cake bottom is typical in Russian and eastern European countries. I particularly liked it because I am not a fan of pie crust. I think the name is a bit of a misnomer, though.

    This looks fantastic and I want to try it for our 4th of July party. I know this thread is really old but I'm hoping you can answer a question. In the assembly process you state to put half the batter in, cover with fruit then top with the other half batter. Then the topping is mixed and should be put on top of the strawberries? Did I miss a step somewhere?

  31. Anonymous - I've updated this recipe so it's less confusing. Yes, you pour half of the batter into your dish, then top with the cut strawberries (or fruit of choice). The pour the remaining batter on top of the fruit. Then sprinkle the topping over the fruit/batter and bake.

    Don't forget the vanilla ice cream to serve on the side! Enjoy!

  35. Anonymous, I don't see why not. I might be inclined to defrost the berries first and pat them dry so the extra moisture doesn't make the dessert too soggy.
